Summer is coming and it is always wonderful to have something in the freezer to serve on a moment's notice. At our lake house this dessert is a summer tradition. It is simple to make but refreshing and is called Frozen Rainbow Delight because it is very pretty as well. Enjoy!

Frozen Rainbow Delight

  • 1 pint whipping cream
  • 3 Tbsp sugar
  • 1 tsp vanilla
  • 1 Box Vanilla Wafers (can use a bit less)
  • 1 cup chopped walnuts
  • 3+ quarts sherbet (orange, red and green) enough to fill angel food cake pan
  1. Whip cream till stiff
  2. Add sugar and vanilla
  3. Crush vanilla wafers and mix with nuts
  4. Fold into the whipped cream
  5. Spread 1/2 of whipping cream mixture in bottom of angel cake pan
  6. Put spoonfuls of sherbets in layers (make a green layer, red layer, orange layer) so each will be seen in each serving
  7. Top with the rest of whipped cream mixture
  8. Cover and freeze Keeps well!
