Sometimes we need something on hand that is simple but tastes complicated. It is great to keep these ingredients in your pantry and freezer so you can make it up to send to a sick neighbor or serve unexpected guests or even expected ones! Serve with a colorful salad or vegetable.

Chicken and Rice Casserole

  • 8 favorite chicken parts washed
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • ½ can water (soup can)
  • ½ stick butter (plus ¼+ stick for on top)
  • 2 cups Minute Rice
  • 1 envelope dry onion soup mix

Melt ½ stick butter in 9 x 13 baking pan (on burners on top of the stove)

Add soups with ½ cup water and mix thoroughly over low heat.

Sprinkle rice over soups pressing down slightly into the soups

Place washed chicken pieces over rice.

Sprinkle with onion soup mix. (1 envelope or a little less)

Put pats of additional butter across top

Cover with foil and bake at 350 degrees... 1 ½ - 2 hours.

Don't peek until 1 ½ hours but check then to make sure it doesn't dry out.

Simple but always good!
